Asian Chicken Salad

This recipe is from Cooking Light although, I did make a few changes. I thought it was good, the kids were not so sure. To go along with the salad, I also made a Vegetable Lo Mein. I did not take a picture because although it tasted good, it would not have made a pretty pic! The Lo Mein I threw together myself and it was a good thing since the kids did like that.

Here is the recipe from My Recipes.com and I think I would make it again. The only thing I did in addition to the recipe was to quickly stirfry the chicken with a little hoisin sauce and chili garlic sauce. I threw the snow peas in at the end just to soften them a little.

Asian Chicken Salad

The Vegetable Stir Fry was as easy as a bag of frozen vegetables(broccoli, carrots, snow peas and baby corn), a package of chinese noodles, a can of water chestnuts, soy sauce, hoisin sauce and rice vinegar.

I think I might have thrown some ground ginger in as well! I used Nasoya noodles which was in the produce section of the grocery store and they were very good. I have tried other kinds of noodles and some are way too gummy or gelatinous. I would use this brand
again.

    Glad to have you back! I haven’t visited in a while, but I back too and could use a few good salad recipes for the same reasons as you!
